- Fresh ginger root peeled and cut into pieces
- Fresh turmeric root peeled and cut into pieces
- Peeled mandarin oranges
- Freshly squeezed lemon juice
- Coconut water, unsweetened
- Honey, or you can use agave syrup
- Grass-fed gelatin (unflavored)

Instructions
- Combine ginger, turmeric, mandarin oranges, and lemon juice in a blender with ½ cup coconut water.
- Blend until smooth, then strain the mixture through a fine mesh strainer into a bowl to remove any pulp. At this point, we should have about 1 cup of liquid-if needed, add a little extra coconut water to reach that amount.
- Bloom the Gelatin: Put ¼ cup of the strained liquid into a small bowl. Sprinkle the two tablespoons of gelatin over the liquid and let it bloom for a few minutes.
- Combine the remaining strained liquid in a saucepan with two tablespoons of honey. Heat the mixture on low, stirring constantly (do not bring it to a boil).
- Once the liquid is warm, add the bloomed gelatin to the saucepan. Stir vigorously until the gelatin is completely dissolved and the mixture is smooth.
- Pour the mixture into your silicone gummy molds. I'm using these cute little gummy bear molds, but you can use any shape you like. I had enough to make about 70 gummy bears.

Refrigerate for about 1 hour or until the gummies have set.

- Once set, pop the gummies out of the molds and store them in an airtight container in the fridge.
