Fried-eggs-with-feta-1

Since I was a kid, I loved feta cheese. My grandma and mom frequently made scrambled eggs with white cheese for breakfast; my kids also love them.

But it wasn't until this summer that I discovered this great recipe that went viral on TikTok and Instagram. The original recipe is from the food writer and recipe developer Grace Elkus, and I must admit that feta-fried eggs became my new obsession and favorite quick breakfast.

Why You'll Love This Recipe

My original thought about combining feta cheese and eggs included the theory that you can not cook them simultaneously because the feta will burn. I would add feta later to my scrambled eggs so they both cook evenly.

But it turned out you can cook them at the same time 😀. My first time cooking this viral feta fried egg recipe failed because my feta cheese got burnt 😠. It took me several tries to master it, and the main idea is to cook them at medium-low heat (so feta won't burn) and cover them with a lid (so that the egg can cook slowly to your liking). Depending on your stovetop, you can even lower the heat.

The verdict? You end up with a perfectly cheesy crust and crispy fried eggs. And the best of all, these crispy fried feta eggs could be made in 10 minutes.

So, if you are in a hurry in the morning, this could be your go-to recipe. Put it on top of toasted bread, pita bread, or flour tortillas, sprinkle of black pepper or red pepper flakes, and even add some goat cheese on top. If you like your food spicy, some hot sauce goes well! Oh, so yum! I am so hungry now by just writing these words 😂.

  • 2-3 tablespoons crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Substitutions/Variations

  • Instead of feta, you can use goat cheese. I never made it with goat cheese, but I don't see why it wouldn't work 😀.
  • Instead of olive oil, you can use butter, vegetable oil, or avocado oil.
  • Add a pinch of paprika, red pepper flakes, or garlic powder for extra seasoning and a bit of heat.
  • Enhance the crispy feta eggs with cooked bacon or diced ham for a heartier breakfast if you like meat in your breakfast.
  • Serve the feta-fried eggs on top of toast, bagels, English muffins, or even a bed of arugula and cherry tomatoes for a low-carb option.

How to Make Crispy Feta Fried Eggs (Step-by-step Guide)

  1. Heat a small nonstick skillet or a small non-stick frying pan over medium-low heat. Add the oil to coat the bottom of the pan.
  2. Once the oil is hot and sizzling, gently sprinkle the crumbled feta cheese in a circle in a hot pan.
  3. Immediately, crack the egg into the pan. Season the eggs with a pinch of salt and a sprinkle of black pepper.
  4. Allow the egg to cook for a few minutes. You can cook it to your desired level of doneness. If you like a runny egg yolk, cook it for a shorter time; cook it longer for a fully cooked yolk. The expression perfectly cooked egg depends on your taste 😏.
  5. Cover the pan with a lid and cook for 1-2 minutes. This will help the feta cheese melt but not brown too much (you want to go for a golden feta). If feta is getting too brown, reduce the heat to low.
  6. Once the eggs are cooked to your liking and the feta is crispy enough for your taste, use a spatula to transfer the eggs with the feta to a plate carefully.
  7. Garnish with chopped fresh herbs, if desired.
  8. Serve the feta-fried egg immediately while it is still hot. You can enjoy it on its own, with toast, or alongside other breakfast items like bacon or sautéed vegetables. It goes well with hash browns 😏.

Helpful Tips and Tricks

  • Use a nonstick pan - cooking your eggs in a non-stick pan will make picking them up from the pan easier and serving them without sticking to the surface.
  • Using a lid while cooking helps steam the eggs' top, which can result in slightly fluffier yolks.
  • Use high-quality, fresh eggs and feta cheese for the best flavor whenever possible.
  • Fresh herbs, like parsley, chives, or basil, add flavor and make your dish look more appealing.

Quick Tip!

Do not rely too much on the recipe instructions for the heat level. We all have different stove tops 😉. Adjust the heat as needed. Lower heat for slower cooking, higher heat for faster cooking. It's essential to get your eggs to your preferred level of doneness and not burn the feta cheese. Use your best judgment at the moment!
