A few weeks ago, I started a new fitness and nutrition routine, and one of the first things I was told to try was going gluten-free. Almost immediately, I noticed my bloating stopped and I felt so much lighter. The one thing I wasn't willing to give up, though? Pancakes.

So I started testing recipes until I landed on this one, soft, fluffy, naturally sweetened with banana, and nothing like the dense, chalky gluten-free pancakes you might be picturing. So good!
