Every weekend morning in my house starts with my kiddos asking me to make pancakes for breakfast. I don’t mind fulfilling their wishes. So this fluffy whole wheat pancakes with kefir recipe is a well-established staple in my kitchen. I made it so many times that I don’t even have to look up my recipe book; I have it all memorized.

Fluffy Whole Wheat Pancakes with Kefir Essentials

Preparing these healthy, fluffy whole-wheat pancakes with kefir is easy. And I am not saying this because I made it so many times, and it became a routine. It is very straightforward.

An essential ingredient in these healthy whole-wheat pancakes is kefir. I’ve been consuming kefir since I was a little kid. It is a big deal in my home country, and when I moved to the US, I had difficulty finding an alternative. Luckily, Lifeway Probiotic Kefir is the best choice in the US. It doesn’t taste exactly like the one at home, but it is a perfect substitute. And consuming kefir is much healthier than drinking milk, all due to the powerful probiotic benefits.

One more important ingredient in these healthy whole wheat pancakes is sparkling water. The important fact here is that the sparkling water is carbonated and provides excellent aeration to the batter. So, your pancakes will end up fluffier!

How to Make Fluffy Whole Wheat Pancakes with Kefir

Here is the list of ingredients that you will need:

  • 2 cups whole wheat flour
  • 1 cup white flour
  • 3 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 6 tbsp coconut oil (or butter)
  • 3 tsp honey, maple syrup, or agave syrup (optional)
  • 2 eggs
  • 2 cups plain kefir
  • 1/2 cup sparkling water

Sometimes I use 3 cups of whole wheat flour; other times, I use 2 cups of whole wheat and 1 cup of regular flour. Adding regular flour will make the batter smoother and the pancakes softer. So it depends on personal preference, but both versions taste yummy.

I usually don’t add any sugar to the batter since we typically pour maple syrup over the pancakes or spread fruit jam or chocolate hazelnut spread. So, no need for any additional sugar. But, if you wish to add it to the batter, add 2-4 tsp of honey, maple syrup, or agave syrup.

Mix dry ingredients in a bowl and wet ingredients in another bowl. Beat the eggs with the fork and add them to the wet ingredients. Combine all in one bowl and mix it by hand until all the flour is broken and mixed.

In a lightly oiled and heated pan, add about 1/4 cup of batter (keep it at medium heat), and cook until the batter starts bubbling. Turn the pancakes and cook on the other side until heated through. Remove from the pan and place it on a plate.

How to Eat These Easy and Healthy Fluffy Whole Wheat Pancakes

There are various ways to enjoy these pancakes. Another reason why I don’t put any sugar in the batter is that you can eat them as a savory or a sweet breakfast. Here are some options:

  • Spread sour cream on top, layer with prosciutto, and add some shredded cheese.
  • Spread some lemon-avocado spread and top it with cherry tomatoes.
  • Spread some ricotta cheese and top it with fresh berries.
  • Spread some fruit jam and top it with fresh fruit (bananas, berries)
  • Spread chocolate hazelnut cream (Nutella) and top it with fruit (bananas go excellent here).
  • Pour maple syrup over the pancakes and top them with fresh fruits such as berries and bananas.
