This Raspberry dessert recipe is my go-to recipe whenever my family craves something sweet. It is a perfect summer raspberry dessert that is so easy to make. The worst part is waiting for it to set in the fridge for several hours. Come on! Who can resist seeing it in the refrigerator and not eating it right away?

The least favorite question for me after dinner is – what’s for dessert? I don’t know about your family, but mine loves desserts. And, guess what, I am not a fan of making them. The main reason is it takes time to prepare any desserts – cakes, pies; you name it. So, if there is a quick dessert recipe, it will be in my folder! This is the case with this light and easy raspberry dessert recipe. And the best part – there is no baking involved! 

Your only effort will involve whipping the heavy whipping cream. And, if you own the Artisan KitchenAid mixer as I do, your level of involvement will be minimal. I happen to be vacationing in my home country of Serbia, and the best way to tackle the summer heat is to make the easy and delicious creamy raspberry dessert. And Serbia is a perfect location to get fresh and tasty raspberries. It is no secret that Serbia is called the land of raspberries. Did you know that Serbia is one of the biggest raspberry growers, along with Mexico and Russia? They together produce more than 50% of the world’s total raspberries globally. So, for all my US readers, next time you buy frozen berries mix from Costco, check out the label to see that raspberries come from Serbia.

Raspberry Nutrition

Along with other berries, raspberries are a rich and powerful food with many health benefits. A critical advantage includes its antioxidant effects found in the chemical called flavonoids. The primary role of antioxidants is to fight free radicals in the body. Too many free radicals can cause cell damage. So, raspberries help prevent many diseases such as cancer, heart disease, and the aging process.

Raspberries are rich in fiber, and only one cup contains about 8 g of fiber (about 1/3 of the recommended daily intake). And fiber is really important in reducing the risk of heart disease and type 2 diabetes.

They are also rich in vitamin C. And vitamin C is essential for collagen production, the protein that makes up about 70% of our skin. So, whenever you see the beautiful red raspberries, don’t think twice and eat them! They are really good for you!

How to Prepare Raspberry Dessert

As I mentioned at the beginning of this post, I like dessert recipes that are quick and easy. And this raspberries dessert recipe is precisely that. There is no lengthy prep, and the best part – is no baking. And it has only five ingredients:

  • 500 ml (16 oz) heavy whipping cream
  • 2 tbsp brown sugar
  • 400 gr (14 oz) frozen raspberries (or fresh if available)
  • 3 tbsp sour cream
  • 200 g (7.05 oz) ladyfingers

  • Pour heavy whipping cream into a bowl and add sugar.
  • Mix until you get the smooth mixture. Add sour cream and mix well. Set aside.
  • Pour milk into a bowl. Dip each ladyfinger into the milk, and break it into small pieces. Layer the pieces on the bottom of the large glass bowl.
  • Add a portion of the whipping cream over ladyfinger pieces. Add raspberries on top.
  • Continue with the layers until all ladyfingers are used up.
  • Add remaining whipping cream on top.
  • Garnish with some fresh raspberries and shred some dark chocolate on top.
  • Close the glass bowl with the clear foil and set it in the fridge.
  • The raspberry dessert tastes best when it sits in the fridge overnight, but it also tastes excellent after 3-4 hrs. However long you choose to let it sit, ensure enough time for ladyfingers to absorb moisture from the heavy whipping cream.

Ingredients
