Why You'll Like This Mint Ginger Lemonade

Water will always be my go-to drink, but when I want something more flavorful, this fresh ginger mint lemonade is my favorite choice. The bright citrus, cooling mint, and spicy kick of ginger make it refreshing on a hot summer day, yet it's just as soothing in the cooler months served warm. Around the holidays, I love adding extra mint sprigs for a festive look that feels special at the table.

This recipe was inspired by my homemade Gut Health Shots with Ginger that also use fresh ginger and lemon. I wanted to create a drink that had the same zing but could be enjoyed daily. My husband used to bring home bottled ginger lemonade from Whole Foods, and while it was tasty, it was often far too sweet for our liking. Adding fresh mint not only lightens the flavor but also makes this ginger mint lemonade drink taste even fresher than anything store-bought.

One of the best parts about making mint ginger lemonade at home is that you control the ingredients, less sugar if you prefer, or honey for a more natural sweetener. It's the kind of recipe that fits any season, whether you're cooling down after a summer barbecue or sipping something vibrant alongside my Oven-Roasted Potatoes and Carrots. Homemade, simple, and refreshing every time.

Health Benefits of Mint Ginger Lemonade

  • Ginger is well known for its anti-inflammatory and digestive benefits. Research suggests that ginger may help reduce nausea, ease indigestion, and support healthy inflammatory responses in the body.
  • Lemon are a great source of vitamin C, which plays an important role in immune defense and collagen production.
  • Mint doesn't just add a burst of flavor, it's traditionally used to soothe digestion and may help ease bloating or mild stomach discomfort.

Ingredients

Ginger Lemonade, ingredients.
  • Ginger root: always give it a good wash. I like to peel it for a smoother texture and better flavor, but if you enjoy a stronger, spicier taste, you can leave the skin on. Fresh ginger really makes this drink shine, but in a pinch, you could use ginger powder (just know the flavor won't be as bold). Looking for more ways to use ginger powder? Try adding it to my Moist Pumpkin Muffins!
  • Lemons: freshly squeezed lemon juice is always my first choice because nothing beats that vibrant citrus flavor. If bottled lemon juice is all you have, it works too. Just pick a good quality one without added sugar or artificial flavors. Want another way to enjoy fresh lemon juice? Give my Power Beet Lemon Juice with Ginger a try!
  • Fresh mint leaves: mint gives this lemonade such a refreshing twist.
  • Sweetener: use whatever you like best. Honey, maple syrup, or agave nectar all taste wonderful here. I used agave syrup in this recipe. Sometimes I go with regular cane sugar, but you can also keep it light and skip sweetener altogether for a more tart version.
  • Filtered water: I use still water for a clean taste, but if you want to make it extra fun, swap it for sparkling water and you'll have bubbly mint ginger lemonade.

How to Make Mint Ginger Lemonade

Ginger Lemonade, peel the ginger.
  1. Step 1: Wash and peel the ginger (peeling is optional if you like a stronger flavor). I use vegetable peeler to peel the ginger.
Ginger Lemonade, grate the ginger.
  1. Step 2: Grate the ginger finely.
Ginger Lemonade, add water to grated ginger.
  1. Step 3: In a small saucepan, combine the grated ginger and water.
Ginger Lemonade, add agave syrup to water and grated ginger.
  1. Step 4: Add the agave syrup and gently heat the mixture (no need to boil) to extract the ginger flavor. Stir occasionally until the sweetener fully dissolves.
Ginger Lemonade, run the boiled liquid through the mashed strainer.
  1. Step 5: Remove from heat and let it cool for a few minutes. Strain the syrup to remove the ginger pieces.
Ginger Lemonade, cut and juice the lemons.
  1. Step 6: Roll the lemons on the counter to loosen the juice. Cut in half and squeeze with a juicer or reamer.
  1. Step 7: In a pitcher, combine the ginger syrup, fresh lemon juice, and the remaining water. Add the washed fresh mint leaves to a pitcher, gently pressing them with a spoon to release their natural oils and flavor. Stir well and taste. Adjust sweetness or tartness by adding more agave syrup or lemon juice if needed.

Top Tip

Refrigerate the lemonade for at least 1 hour so the flavors can meld. Serve over ice and garnish with lemon slices and fresh mint leaves. Stir again before pouring. Serve it with my One-Pan Creamy Chicken with Spinach without Heavy Cream for a perfect pairing.

Substitutions

  • Sweetener: instead of agave, you can use honey, maple syrup, or even coconut sugar. For a sugar-free option, stevia or monk fruit sweetener works too.
  • Citrus: lemons are classic, but limes or even a mix of orange and lemon juice add a fun twist.
  • Mint: if you don't have mint, fresh basil adds a beautiful herbal note, or you can simply skip it for a straight ginger lemonade.
  • Sparkle it up: replace still water with sparkling water or club soda for a fizzy, party-ready version.
  • Ginger: fresh ginger root gives the best flavor, but in a pinch, you can use ginger powder (start with a small amount and adjust to taste).

Storage

  • Refrigerator: store leftovers in a sealed glass jar or pitcher in the fridge for up to 3-4 days.
  • Freezer: you can also freeze ginger lemonade in ice cube trays. Drop a few cubes into a glass of water for instant flavor.
  • Flavor boost: if storing, keep extra fresh mint and lemon slices aside and add them just before serving so they stay bright and fresh.
