  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 ½ cup of heavy cream
  • ¼ cup Parmesan cheese
  • 2-3 cups fresh baby spinach, chopped
  • 2-3 tbsp sun-dried tomatoes, chopped

    In the same skillet, pour the heavy cream and warm it over low heat. Stir gently, add the minced garlic, and cook for about 30 seconds until fragrant. Let the sauce simmer for 2-3 minutes until it slightly thickens, allowing the flavors to blend beautifully.
  • Add the Parmesan:
    Stir in the grated Parmesan cheese and mix until melted into the sauce, scraping the bottom of the pan if needed. 
  • Add the fresh spinach and sun-dried tomatoes:
    Stir in the chopped spinach and sundried tomatoes. Cook for 2-3 minutes until the spinach wilts.
  • Combine everything:
    Return the cooked chicken to the skillet, coating it with the creamy sauce. Let it simmer for another 2 minutes to heat through.
