If you were to ask my kids what they wanted for breakfast, they'd choose between pancakes, crepes, or waffles. I usually go for regular waffles and add some fruit on top. Since my youngest isn't a big fan of fruit, I try to sneak in fresh fruit whenever possible. Including chopped apples in the waffles was a fantastic trick I tried, and it turned out wonderfully. 

One of the best things about these mini waffles is their versatility. They're not just a delicious breakfast treat but also a time-saver. I usually double the ingredients, making about two dozen waffles, and then freeze them. This simple meal prep ensures they're ready for quick breakfasts on those busy mornings.

Now, here's where the fun begins. Toast up these apple waffles and let your creativity run wild with your favorite toppings! Whether it's the classic maple syrup, indulgent Nutella, or refreshing fresh fruits, you can customize them to your liking. It's your breakfast, your way 😏. 

Ingredients for Apple Waffle Mix

  • 1 cup all-purpose flour and 1 cup whole wheat flour
  • 2 tbsp maple syrup or agave syrup if you prefer. 
  • 1 tbsp baking powder and ½ tbsp baking soda
  • Pinch of sea salt
  • 1 tsp cinnamon and ¼ tsp nutmeg
  • 2 eggs
  • 1.5 cups plain kefir or buttermilk. I love using plain kefir in my recipes, and adding kefir to the recipe makes the waffles tangy and soft. It also adds some healthy bacteria to your tummy. If you don't have kefir, buttermilk works too.
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 medium-sized apple, chopped. You can use any type of apple you prefer or have on hand for this recipe. Popular choices include Granny Smith for a tart flavor, Honeycrisp for a sweet and crisp texture, or Gala for a balanced flavor. Essentially, any apple variety you enjoy eating will work well in these waffles!

How to Make Apple Waffles

  • In a large bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix well until all dry ingredients are evenly distributed.
  • In a separate bowl, beat the eggs lightly. Add them to the flour mix, followed by other wet ingredients: maple syrup, kefir (or buttermilk), melted butter, and vanilla extract. Mix until well combined.
  • Be careful not to overmix; a few lumps are okay.
  • Gently fold the chopped apple pieces into the waffle batter until evenly distributed.
  • Preheat your waffle iron according to the manufacturer's instructions.
  • Lightly grease the preheated waffle iron with cooking spray. Pour about ¼ cup of batter onto the hot waffle iron, spreading it out evenly. Close the lid and cook according to the waffle iron's instructions or until you get golden brown and crispy waffles.
  • Once cooked, carefully remove the waffles from the waffle iron and serve immediately. You can top them with additional chopped apples, a drizzle of maple syrup, a sprinkle of cinnamon, or your favorite toppings.

Quick Tip!

To make cleanup easier, lightly grease your waffle iron before cooking. This helps prevent sticking and simplifies removing the waffles once they're cooked!

How to Store Apple Waffles

  • To store apple waffles, allow them to cool thoroughly first. 
  • Then, you can store them in an airtight container or zip-top bag in the refrigerator for 3-4 days. 
  • You can freeze them if you'd like to store them for longer. Place the cooled waffles in a single layer on a baking sheet and freeze until solid, then transfer them to a freezer bag or container for up to 1-2 months. 
  • When ready to eat, reheat in a toaster, oven, or microwave until warm.
