These fluffy whole-wheat pancakes with kefirand sparkling water are so delicious that you'll want to make them very often. They pair excellently with maple syrup and fresh fruit.
3teaspoonhoneyor maple syrup, or agave syrup (optional)
2cupskefirplain
½cupsparkling water
2eggs
Instructions
Mix dry ingredients in a bowl.
Mix wet ingredients in another bowl.
Beat the eggs with the fork and add them to the wet ingredients.
Combine all in one bowl and mix it by hand until all the flour is broken and mixed
In a lightly oiled and heated pan, add about ¼ cup of batter (keep it at medium heat), and cook until the batter starts bubbling.
Turn the pancakes and cook on the other side until heated through.
Remove from the pan and place it on a plate.
Enjoy the pancakes as a savory or a sweet breakfast.
Notes
Sometimes I use 3 cups of whole wheat flour; other times, I use 2 cups of whole wheat and 1 cup of regular flour. Adding regular flour will make the batter smoother and the pancakes softer. So it depends on personal preference, but both versions taste yummy. Several ways to enjoy these fluffy whole-wheat pancakes with kefir:
Spread sour cream on top, layer with prosciutto, and add some shredded cheese.
Spread some lemon-avocado spread and top it with cherry tomatoes.
Spread some ricotta cheese and top it with fresh berries.
Spread some fruit jam and top it with fresh fruit (bananas, berries)
Spread chocolate hazelnut cream (Nutella) and top it with fruit (bananas go excellent here).
Pour maple syrup over the pancakes and top them with fresh fruits such as berries and bananas.
