Instructions
Beat eggs in a shallow bowl, either with a fork or with a whisk. Add milk, brown sugar, and cinnamon and mix well.
Add about 2 tablespoon of oil to a skillet and heat it over medium heat. I typically set up two skillets on the stove to speed up cooking and use both simultaneously.
While waiting for the oil to heat up, slice each piece of bread into a triangle to have 18 triangles total.
Dip a triangle in the egg mixture and flip to ensure both sides are coated. Leave the bread in the mix briefly because the bread will break apart. 2-3 seconds per side is enough.
Place the triangle on the hot skillet and add a thin slice of butter on top of the triangle. Cook until golden brown and flip to the other side (add a thin piece of butter on this side). Repeat until all triangles are used up. Note: you might need to add more oil to cook other triangles, but make your judgment as you go.
Add maple syrup over the triangles and top it with the fruits of your choice.
