This easy overnight chia pudding with kefir is creamy, chocolatey, and satisfying. Made with chia seeds, plain kefir, milk, cocoa powder, and maple syrup, it's a simple make-ahead breakfast that you can customize with your favorite fruit and toppings.
Add the chia seeds to a Mason jar, bowl, or glass container.
In a separate bowl or measuring cup, combine the kefir and milk.
Add the cocoa powder and maple syrup and stir until well combined.
Pour the kefir mixture over the chia seeds and stir thoroughly.
Cover and refrigerate for at least 2–3 hours, or preferably overnight.
Stir the mixture again after about an hour to help prevent the chia seeds from settling.
