Whole Wheat Waffles

Easy and delicious reacipe for healthy waffles made with coconut oil.

Ingredients

  • 2 cups white whole wheat flour
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 tbsp coconut oil melted
  • 2 tsp honey
  • 1 tsp vanilla extract
  • 1 1/2 cups plain kefir
  • 1/2 cup sparkling water
  • 2 eggs

Instructions

  • Prepare coconut oil. Melt coconut oil on the stove or in the microwave. Set aside.
  • Combine dry ingredients. In a large bowl, mix white whole wheat flour, baking powder, baking soda, and salt.
  • Combine wet ingredients. In another bowl, whisk together melted coconut oil, honey, vanilla extract, plain kefir, sparkling water, and eggs.
  • Fold wet ingredients into dry ingredients.
  • Preheat your waffle iron. Lightly coat with oil using a brush or paper towel.
  • Using about 1/2 cup of batter, cook waffles until golden. Let it cool on a cooling rack.
  • Top it off with maple syrup and fruits of choice.

Notes

You can serve the waffles immediately after cooking or keep them in a warm oven until all of the waffles are ready.  
These waffles are great if topped with Nutella (I agree with my kids on this one!), and fruit.
