Prepare coconut oil. Melt coconut oil on the stove or in the microwave. Set aside.
Combine dry ingredients. In a large bowl, mix white whole wheat flour, baking powder, baking soda, and salt.
Combine wet ingredients. In another bowl, whisk together melted coconut oil, honey, vanilla extract, plain kefir, sparkling water, and eggs.
Fold wet ingredients into dry ingredients.
Preheat your waffle iron. Lightly coat with oil using a brush or paper towel.
Using about 1/2 cup of batter, cook waffles until golden. Let it cool on a cooling rack.
Top it off with maple syrup and fruits of choice.
