Begin by scooping the flesh from two ripe avocados into a mixing bowl. Make sure they’re perfectly ripe to achieve the smoothest consistency. Add ripe banana, maple syrup, coconut oil, and a pinch of salt into the blender with the avocado. Mix well in a blender or a food processor until all ingredients are combined to create a thick, creamy mixture
Melt the chocolate chips in a microwave-safe bowl or using a double broiler on low heat while stirring frequently until smooth. Be careful not to overheat, which may cause the chocolate to seize. Add the melted chocolate to the avocado mixture. Stir gently until well incorporated. Line an 8×8-inch bakingdish with parchment paper. Transfer the fudge mixture to the prepared dish and spread it evenly using a spatula until you achieve a smooth top. Optional: Sprinkle chopped nuts or shredded coconut on top for added texture and flavor.
Place the container in the freezer for at least 3 hours or until the fudge is firm and set.
Once the fudge has been set, remove it from the freezer and cut it into bite-sized squares. If desired, dust the fudge bites with cocoa powder.
