This simple oven-baked potato (no foil) with green onion and sour cream is a great light meal. It's loaded with healthy carbs and vitamins, and this recipe shows you how to bake a potato without foil and add a delicious topping.

Potatoes often get a bad reputation because many associate them with french fries. However, when prepared healthily (unlike french fries!), potatoes can be a guilt-free addition to your meals.

Potatoes are a powerhouse vegetable packed with healthy carbohydrates. In my post, Baby Potatoes Recipe, I explored their nutritional benefits. To summarize, potatoes are rich in carbs, dietary fiber, iron, vitamin C, and even protein.

If you're looking for a meat-free dinner idea, baked potatoes are an excellent choice. They provide all the essential nutrients you need, including a good dose of protein.

Ingredients for Oven-Baked Potatoes with Green Onion and Sour Cream

This recipe is for 2-4 servings, but you can adjust it based on the size of the potatoes.

  • 4 russet potatoes: I found that russet potatoes are perfect for this recipe. I used 4 small to medium-sized ones, but if you opt for larger potatoes, be sure to adjust the amount of toppings accordingly.
  • 1 tablespoon extra virgin olive oil: You can substitute with avocado oil if you prefer, but I think olive oil gives the best flavor.
  • Salt to taste: I used about ¼ tsp, which worked well for me. Just be careful not to oversalt.
  • 2-4 green onions: Use both the green and white parts for maximum flavor.
  • ½ cup sour cream + 1 teaspoon extra virgin olive oil: This combination adds a creamy and rich topping with a touch of extra flavor.

Substitutions

  • Yukon Gold potatoes: For a creamier texture with a slightly buttery flavor.
  • Red potatoes: These will hold their shape well and have a smoother texture.
  • Avocado oil: A mild-flavored option with a high smoke point.
  • Coconut oil: For a slightly sweet, tropical flavor.
  • Greek yogurt: A healthier, protein-packed option with a tangy flavor.
  • Vegan sour cream: A dairy-free alternative.
  • Chives: A milder, delicate alternative to green onions.
  • Red onions: If you prefer a slightly sharper taste.

How to Prepare Oven-Baked Potatoes with Green Onion and Sour Cream

  • Preheat the oven to 400°F (200°C).
  • Prepare the potatoes: Pat the cleaned potatoes dry, then rub them with olive oil and sprinkle with salt to coat evenly. Use a fork to poke a few holes in each potato to help release steam as the cook.
  • Bake: Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 55 minutes, or until the skins are crispy and a knife easily pierces through the center.
  • Prepare the topping: While the potatoes bake, combine ½ cup sour cream and 2 finely sliced green onions in a small cup or bowl. Add 1 teaspoon olive oil and stir gently.
  • Serve: Remove the potatoes from the oven and let them cool slightly. Slice them open lengthwise, fluff the insides with a fork, and generously dollop sour cream on top. Sprinkle with green onions.
  • Enjoy: Serve immediately while warm for a deliciously satisfying side or light main dish!
