Ingredients for Oven-Baked Potatoes with Green Onion and Sour Cream
This recipe is for 2 servings, but you can adjust it based on the size of the potatoes.
- Four potatoes. I found that russet potatoes work great in this recipe.
- 2-4 tbsp olive oil.
- Salt to taste.
- 2-4 green onions (use both green and white parts).
- 1-2 cups sour cream.
How to Prepare Oven-Baked Potatoes with Green Onion and Sour Cream
Time needed: 1 hour
- Potato prep.
Wash the potatoes in running water and dry them with a paper towel. Do not peel the skin.

Using a fork, poke the potatoes several times.

Line a baking dish with baking paper.

Using the oil brush, rub the olive oil all over the potatoes.

Sprinkle some salt on top.

Bake the potatoes in the oven at 400 F (200 C) for about 45 min up to 1 hr. When the skin is crispy, and the fork goes easily through the potato, take the potatoes out of the oven and let them cool for several minutes.

Cut the potatoes open and add the green onion and sour cream topping.

Slice green onions thinly (both green and white parts) and put in a bowl.

Add 1-2 cups sour cream to the bowl and mix well.
